Like beef or lamb shank, venison shanks are rich in connective tissue that breaks down beautifully during slow cooking. The result is deep flavour and natural richness, with less fat and more flavour and protein.
Our favourite two uses are whole seared then slow cooked shanks, or Osso-Bucco!
Shanks are sold whole, but can be cut for Osso-Bucco on request.
